Soju from Korea
The process starts with cool spring water. To this is added a mix of the highest quality rice, barley, koji and/or sweet potato, which are fermented and then distilled. The result is then purified using modern cold filtration techniques to insure a spirit with the cleanest most refreshing taste possible. Finally, the soju is aged to perfection in underground oak casks. The result is soju, an exotic yet highly versatile, unique white spirit with 1/3 the calories of vodka.
Effective January 1, 1999, on-sale liquor license holder authorized to sell beer & wine may also sell Soju, an imported alcoholic beverage containing no more than 24% alcohol by volume and is derived from agricultural products.
Any on-sale license, issued pursuant to this division that authorizes the sale of wine, also authorizes the sale of soju, an imported Korean alcoholic beverage that contains not more than 24 percent of alcohol by volume and is derived from agricultural products.
